The method is actually quite easy. First of all, open the Styles menu and then click on "open styles sets". This will bring up a window which contains all of the styles sets Mellel happens to have at present. In the character column of the style set which you use you will find a list of it...

At first it sometimes looks like a newly downloaded template consists only of a title page. But further investigation will show you that the entire style set is actually there. I use Aspell. But I find no problem whatever when using Apple's built in spell checker with Mountain Lion and Mellel 3.0.1...

I suspect that Spell Catcher has not been updated for Mountain Lion.
Apart from that, I have never had any luck with Spell Catcher, so I haven't tried it with Mountain Lion.
