I’d like to be able to do it without leaving the keyboard, which means no palettes and no menus (or palettes and menus BUT with a good keyboard shortcut right out of the box).

Why would you want to specify the zoom in numbers? Do you really care if the zoom is, say, 175 % or 180 %? I’m happy with the current implementation, I would be perfectly happy if it was additionaly possible to zoom to the page width and text width (= page without the margins).

Just in case you care: The “Times” font shipped with OS X is a TrueType font and Mellel currently does not kern TrueType fonts (try the word “VILTAVA” with a high zoom level for example). Therefore it might be a better idea to use the Times as a fallback solution only.
