Is there any way within Mellel to duplicate Word's behavior for the em-dash? In Word you just type two hyphens--like so--and it automatically replaces them with the em dash. The best way to do that is probably using the Find and Replace option, creating a FindSet with Find Actions that do the work. I've checked this a bit.
