Have you tried the key combination Command + CTRL + Y in Bookends? That opens up a window where you can enter the page number and tweak several other details.

Thanks, ealvarez, for these comments. I wandered into my local Apple Store over the weekend and had a look at the iPad Pro with keyboard built into the case. I could imagine getting some serious work done in split screen mode on one of those.

Actually, I have two page styles in my document: one is for the front matter with pagination in Roman numerals, the second is for the body of the text, with pagination in Arabic numerals.

For what it's worth, I'm using Typinator with Mellel and am happy with the way they work together. I am just using Typinator as an auto-correct tool, but I believe that it's capable of much more.
