Choose Insert->Note->Edit Note Attributes and select a different character style in the "Note text style" section's "Character" popup menu.

To my knowledge, this is a know issue with Mac OS X that makes it difficult to save document packages on "Services for Macintosh" servers. You get the same issue with text edit rtfd (styled text+images) and pages documents, for example.

~/Library/Application Support/Mellel/Backup

BTW, your system should not crash, applications can and do crash sometimes but an entire system crash should be regarded as a serious warning sign.
