I would say a shortcut for "Plain Text" cannot work because Mellel has this submenu twice: once in copy special and once in paste special.

I just tested it to be sure. With Word v.X all of the used diacritics in a Mellel file are still there after Export to RTF and opening the file in Word.
So maybe your problem is not a Mellel problem?
