Creating a letter template

Unfortunately I must confess that, even after years of daily experience with Mellel, I continue to find working with styles difficult. I have read the style sections in the User Manual (and those in Don Broadribb's Tutorial) many times, and yet even designing a simple letter template remains difficult. I loose my way very quickly get between various approaches and alternatives. Sad, but true.

Now I want to create a letter template with on the first page a header containing the letterhead (name, address etc.), and on the following pages a header containing just the page number. No footers. What is the simplest way to do this? A document template with just one page layout, but a different header on the first page? A document template with two different page layouts? A style set?
