I just realized that, even if one decides to build separate tables of content for chapters, tables, figures, etc., Mellel merges all those lists into a long, aggregate one: List of chapters, immediately followed by the list of tables, the list of figures, the list of examples, etc.
Of course, my dissertation template requires that each one of the individual lists appear on a separate page with its own title (i.e. a List of Figures page, a List of Tables figure, and so on).
Is there a way for Mellel to produce those lists separately, or do I have to cut-and-paste each list into the right place after the merged, aggregate TOC is produced?

I accomplished this by generating each table in turn, with only those autotitles that were appropriate.
In the autotitle dialog, you can select whether each autotitle is included in a table of contents. I first selected only headings, then generated a TOC. I then went back to the autotitle dialog and selected only figures, and generated another TOC.
It's slightly fiddly, but there you go.
