Loving the new version—fantastic stuff. A slight irritation is that the language pop-up menu on the handsome new palette keeps changing to USA English. Is there a way to stop this?

The language keeps changing because of the keyboard layout/language associations.
You can control the association in Preferences/Language. You can remove the assignment for a particular language by choosing the language and then choosing the keyboard layout (or none) or you can turn off the feature by unchecking the "Synchronize Language and keyboard"

I've tried all of these solutions and it keeps switching from UK to US English.
