Coloured fonts

How does one change the colour of fonts ? The Help-menu, says Format, Font, Show Colors, &c., but my menu-bar has got no Format on it.

ad-hoc: in the Character palette/attributes/Fill&Highlight or /Stroke

in style sets: edit the Character style and select Fill&Hight or Stroke

P.S. The Help menu response you quote is an OS X standard used by "some" apps [but interestingly, not Pages]
