Hi,
I just realized that while we cant move headings around in the outline view, we can't change their level just by draging them (ie. needs right clicking). I'm wondering why is it the case. Could it be added as a feature?

If I understand your problem correctly, it is about promoting or demoting auto titles in outline-mode. This is very easily done with the double arrows << and >> at the bottom of he column. I cannot, however, make it work by the suggested shortcuts (⌘→ and ⌘←).
