British English

This is going to be one of those "doh!" questions when someone posts the answer, but how do I spell-check in British, as opposed to American English? Turning the International System Preference to UK English hasn't done it (after quitting and restarting Mellel). Or do I have to log off and on again?

It's much simpler than that. Press apple + colon keys for the Spelling window (or get there through the Edit menu) and choose the dictionary you want.

Thanks. But how do I set British English as the default paragraph language, so I can check as I type?

I think you select English in the Character Style window, which aplies to all documents using that style, and then choose the British English dictionary as I described before, which is document-specific.
