I'm having an odd problem. I have an arrow character through my doc, ➣ .

after I updated to Lion, the character turned into a chinese character everywhere BUT ONE place in my document. I can't even copy and paste the character here, because when I paste it, it still looks like the arrow.

I've tried pasting the one good one to replace the chinese character, but it doesn't change anything. I've also erased them and tried inserting the arrow in again via the character viewer, still no luck.

In fact, all of the bullet/stars characters in my character viewer go chinese!

The problem is that not all fonts include an arrow symbol, and those that do may not have them at the same Unicode spot.
Highlight your Chinese symbol, choose your western language flag (presumably one of the English language flags), and then insert your arrow in place of the Chinese character. If necessary, you might have to try several English language fonts in order to get one with an arrow that is one of those you find most appealing aesthetically.
