Where can I set default document variables?

Where can I set default document variables? In earlier versions that was possible in Mellel’s preferences, and the user guide still talks about preferences as being the place where the default can be set. But if I look at the Document Setup preference pane, I can only change the title of document variables, but not their default content. Or have I missed something?

Also, a feature request to the Redlers: please enable moving through the document variables in the Document Setup window using the tab key. Thanks! :)

The way that I do it is to set everything up as you like, then save that as a Template. Set this Template as the default (check the "Make Default" box).

Next time you open a new document, everything will be as you set it.
